Day 26 - Butterscotch Pie


Butterscotch Pie – Sue Pruliere

1 c brown sugar
Few grains salt
1 c milk
2 egg yolks
2 T butter

Mix sugar, flour and salt. Gradually add milk-mix well. Beat egg yolks- add. Cook over hot water stirring constantly until thick. Add butter. Pour into pie shell.

Note : This was quite yummy...very sweet. We ate it topped with whip cream, which I recommend. This was originally to have meringue, but quite frankly, we've had enough of meringue.....so, we modified this recipe by dropping the meringue.

  1. THis was a good pie. Whew. I have been feeling badly about not liking the pie recipes that Sue gave us. I don't want to hurt her feelings by not liking the recipes she was so kind to give us. I liked this one. It would be good with meringue as well, but we've had enough of the white fluffy stuff for now. We left it plain and it was really nice. Smooth texture and sweet. I needed to cook it on the stove a little longer as it was a bit runny. I think everyone enjoyed this one.
    We haven't had any pie disasters lately, though they are starting to pile up in the fridge. Please feel free to come and help us with the overload. Our neighbour is starting to complain that she'll gain weight from me taking the extra piece to her house. :) I told her to join the club. At least I'm not over there every day ... yet.
