Day 27 - Dixie Pie



Dixie Pie – Taste of Home

¾ c raisins
1/2c butter or margarine, softened
½ c sugar
½ c brown sugar
3 eggs
1 teaspoon vanilla extract
2 teaspoons ground cinnamon
½ c chopped nuts
1/2 cup flaked coconut
Whipped topping and additional chopped nuts optional

Line a 9-in. Pie plate with pastry. Trim pastry to ½ inch beyond edge of plate; flute edges. Line crust with a double thickness of heavy-duty foil. Bake at 450 degrees for 10 minutes. Discard foil. Cool on wire rack. Place raisins in a saucepan and cover with water; bring to a boil. Remove from the heat; set aside. In a mixing bowl , cream butter and sugars. Beat in eggs, vanilla and cinnamon until smooth. Drain raisins. Stir raisins, nuts and coconut into creamed mixture (mixture will appear curdled). Pour into the crust. Bake at 350 degrees for 30-35 minutes or until set. Cool on a wire rack. Garnish with whipped topping and nuts if desired.



Notes : This is very yummy!! Like a butter tart, but not quite so sweet. Tasty....tryid it with whip cream, but you really don't need it. Nice, this is a definite again pie!

Day 26 - Butterscotch Pie


Butterscotch Pie – Sue Pruliere

1 c brown sugar
Few grains salt
1 c milk
2 egg yolks
2 T butter

Mix sugar, flour and salt. Gradually add milk-mix well. Beat egg yolks- add. Cook over hot water stirring constantly until thick. Add butter. Pour into pie shell.

Note : This was quite yummy...very sweet. We ate it topped with whip cream, which I recommend. This was originally to have meringue, but quite frankly, we've had enough of meringue.....so, we modified this recipe by dropping the meringue.
