Day 27 - Dixie Pie
Dixie Pie – Taste of Home
¾ c raisins
1/2c butter or margarine, softened
½ c sugar
½ c brown sugar
3 eggs
1 teaspoon vanilla extract
2 teaspoons ground cinnamon
½ c chopped nuts
1/2 cup flaked coconut
Whipped topping and additional chopped nuts optional
Line a 9-in. Pie plate with pastry. Trim pastry to ½ inch beyond edge of plate; flute edges. Line crust with a double thickness of heavy-duty foil. Bake at 450 degrees for 10 minutes. Discard foil. Cool on wire rack. Place raisins in a saucepan and cover with water; bring to a boil. Remove from the heat; set aside. In a mixing bowl , cream butter and sugars. Beat in eggs, vanilla and cinnamon until smooth. Drain raisins. Stir raisins, nuts and coconut into creamed mixture (mixture will appear curdled). Pour into the crust. Bake at 350 degrees for 30-35 minutes or until set. Cool on a wire rack. Garnish with whipped topping and nuts if desired.
Notes : This is very yummy!! Like a butter tart, but not quite so sweet. Tasty....tryid it with whip cream, but you really don't need it. Nice, this is a definite again pie!

This pie is quite easy to make and really good! Take a butter tart and put it in a pie shell with a few extra ingredients. The recipe even says you can add chocolate chips if you like (that's for you Darren). We didn't add the chips but liked it still.
ReplyDeleteHannah's friend's mother came over and as I was loading her up with the remainder of this pie, Allan reminded me that we still had leftover butterscotch pie in the fridge. (Interesting that at the start, we were fighting over the leftover pieces, and now we forget about them. ) I tried to load her up with all six pieces of pie but she wouldn't. I finally managed to squeeze four of the pieces into a container and pawn them off on her. She's having fun with the leftovers. She even liked the Black Bottom Pie from the other day. I gave it to her with an apology and permission to toss it. Turns out she liked it. Who'd have thought, eh?
So I still had two pieces of pie to get rid of. Ok, that doesn't sound very nice so I'll say .... can't think of anything .... alright, just needed some sucker to take these last two pieces. We thought they were good so I'm not worried about offending anyone's taste buds.
I ended up taking them (once again) to my neighbour, and having tea with her. It was a good excuse for a visit and I just got back. She's enjoying the pie and I think she'll be sad when we're done.
