Grasshopper Pie – Better Homes and Gardens
7 oz marshmallow crème
¼ cup green crème de menthe
2 tablespoons white crème de cacao
2 cups whipping cream
Chocolate-Wafer Crust
1/3 c margarine or butter
1 ½ c crushed chocolate wafers
1/3 c margarine or butter
1 ½ c crushed chocolate wafers
Melt margarine. Add crushed wafers, toss to mix well. Spread mixture evenly into a 9-inch pie plate. Press onto bottom and sides to form a firm, even crust. Chill for 1 hour or till firm.
Whipped Cream (optional)
Chocolate Curls (optional)
Chill Chocolate Wafer Crust at least 30 minutes. Meanwhile, in a mixing bowl combine the marshmallow crème, crème de menthe, and crème do cacao. Beat with an electric mixer on low speed till smooth. Whip cream till soft peaks form. Fold whipped cream into marshmallow crème mixture. Spoon filling into chilled crust. Freeze at least 5 hours (pie will not freeze firm). Garnish with additional whipped cream and chocolate curls if desired.
Note : This was a nice smooth pie. Now I'm not a mint chocolate type guy, but this was nice. Not too strong a flavor, and the crust really helped provide a balance. Without the crust it would be too much.

Ok. Here's a pie with a story. The story covers this and the next pie. It all started last week when I was gathering ingredients for the pies. Usually I go out on Monday and get everything for the week. Oh, if it could be so simple every week! After looking in several stores I concluded that I couldn't get mint ice cream without chocolate. Thankfully I could custom order it from The Ice Creamery (Yup! This is a plug for this privately owned business in Lambton Mall.) They would make it for me and I could pick it up Friday morning. That seemed to work as we don't eat the pie until supper time. Too bad I didn't read the whole recipe...
ReplyDeleteI got the ice cream, picked up the peppermints I needed for the Fudge Ribbon pie and seemed all set to go. Home, start making the fudge sauce, pull a pie crust out of the freezer that I made yesterday and preheat the oven to bake the shell. The ice cream was in the fridge softening. Things looked very happy. Then I read the whole recipe. This pie has to be in the freezer a minimum of 8 hours BECAUSE I make a meringue, put it on top and BAKE the pie for 8 minutes in the oven. Ok. I'm scared. I've never baked an ice cream pie before. Calculating how long the pie will take, I figure that I can go quickly and we'll still have pie some time around 8 that night. It wouldn't be the first time.
The buzzer beeped ... pie crust done ... ice cream soft enough ... fudge sauce cooling . By the time the crust is cool, I should be set to go. Sadly, taking the crust out of the oven I dropped it. I must confess I said a few choice words. I could have used some sort of super power like 'sticky fingers'! I don't have another crust in the freezer and now must make another, roll it out and bake it before the ice cream is too soft and the fudge gets too hard. AUGH!!!
No Fudge Ribbon pie tonight. Must think fast.

We ended up having Grasshopper Pie tonight (as you can see by the picture) and we'll have Fudge Ribbon tomorrow. I'm still nervous about putting it in the oven, but this blog is about Grasshopper.
It's a really good pie. We all loved it. I was surprised at how easy it was to make and how much alcohol there was in it. Found out that I like Creme de Cacao. Perhaps we should rename this an "Age of Majority" pie. :) I didn't tell the kids about the booze until after we ate it.
It's really light and the sweetness is nicely balanced by the chocolate crust.
A bonus for this making if it was the fact that it doesn't have very many ingredients and is quick to make. Time was getting short and I needed a pie!
Loved it and will do it again ... soon.
As a final note I must say, that I've never made anything that used marshmallow creme before. It's REALLY gooey and hard to get out of the jar. I didn't even read what it's made of. I just knew by looking at it that it wasn't good for me. It reminded me of the inside of campfire cooked marshmallows - only not hot and burning my fingers.
WOW long comment much...anyway i LOVED the pie. It was good even after i found out what was in it. I was asking if i could take it to school...but none of the peeps at the table thought that would work. (the teachers would probably know about the alcohol)

Looks divine! Nancy, you are a trooper! Maybe it's because I don't love grocery shopping or baking, but I'm impressed with how you're obviously going the extra mile in your preparations.
