Day 18 - Double Crust Blackberry Pie

Double Crust Blackberry Pie – Better Homes and Gardens

4 c Blackberries
1 c sugar
1/4 C flour

Mix Ingredients for filling, adding flavouring, if desired. Transfer to a pastry-lined 9-inch pie plate. Cut slits in top crust. Adjust top crust. Seal and flute edge. Sprinkle with sugar, if desired. Cover edge with foil. Bake in a 375 degree oven 25 minutes. Remove foil. Bake for 20-25 minutes more or till the top is golden and fruit is tender.

This pie was enjoyed by all, with the except of Samuel not caring for the Blackberries, but loving the juice and crust. LOL.

The Blackberries were rather expensive, and the cost of the CUSTOM made Mint Ice cream (for the Grasshopper pie in a few days) was $11.00 for a liter. Purchased at Ice Cream Galore....they do custom flavours!  The overall cost for this seven day part of the journey was $77.54.

  1. It all get's very confusing. I made blueberry pie ... and it came out bluish pink. Then blackberry pie and it came out reddish. Why aren't they the colour they say when they're cooked?
Anyway, a really good pie. I'd have never thought about making blackberries into a pie until I saw the recipe in my cookbook. The berries weren't cheap but Hannah thinks we need to plant a bush and grow these so we can make more pie. :)
It was easy enough to make with a few basic ingredients. I loved the flavor but may use a bit less sugar next time. The berries didn't go to mush but softened and kept their shape. It's a really nice colour.
I like making these fruit pies, but love the variety of the many different types of freezer, whipped and fruit pies. This week has some really yummy looking ones. Nothing that makes the kids cringe! {whew} Some of the ingredients are hard to get hold of and I've used a lot of gas looking for some of them, but that's ok. I think I'm developing an addiction to grocery stores. :)
I really liked this pie in flavor and looks. It crumbled coming out of the pie plate but my mom used to say that's because the crust is so tender. Thanks for teaching me to make good pastry, Mom. :)

  2. I loved this pie! I got to say it is now my favourie berry pie! It was so very sweet, but not too sweet, and so full flavour! The blackberries were amazing! An explosion of flavour emmited from the pie once placed in my mouth - a flavour so amazing, i can't believe Carly CHOSE to miss out on this! There seems to be no describing word for this pie - I can only say it's AMAZING! A second piece will be in my lunch, and my friends at school will watch sadly and helplessly as I devour the pie without letting them get a single bite. Like I said - this pie is awesome - its too awesome to share with my friends.
