Parfait Pie – Better Homes and Gardens

1tsp finely shredded orange peel
¼ c orange juice
3 oz flavoured gelatine
1 pt vanilla ice cream
½ c whipping cream

Bring orange juice and ½ cup of water to boiling. Add gelatine; stir to dissolve. Stir in orange peel. Add ice cream, a spoonful at a time, stirring till melted. Chill if necessary till partially set (consistency of unbeaten egg whites). Whip cream; fold into gelatine mixture. Chill till mixture mounds when spooned. Spoon into pastry shell. Chill for 5 to 24 hours or till set.

Notes : This is the final day of pie. This looks like a great tasting pie, with some smooth texture. I'll let ya know when I get to eat it. The final cost for the pies ran at $50.54. The grand total of the pie tour ran us $216 CAD.....that's $6.97 a pie, not counting electricity and other odd incidentals. That's actually pretty cheap desert for 5 people per day.... $1.39 per person. Our course the labour of love is priceless, so I can't include that in the price.

I have the best wife in the world! Thank you Nancy for all your hard work and patience. I'm sure it was a tough labour especially when the pies were a strike out.  Fortunately there weren't too many of those.

For the many of you who thought we would be sick of pie by the second week.....WRONG. We still love them. I think this made everyone a little more adventurous when it come to trying new pies though. I don't know what the next adventure may bring, but hey....we're enjoying the journey!

Thanks for reading, I hope you got something out of all this.

  2. This is it. The last pie. I've been looking forward to this and now that it's here, I'm a bit sad. I love baking and making delicious things that my family enjoys. When we had a nasty pie, I took it personally, a little too much sometimes, but I wanted everyone to enjoy all the different things. We certainly did have a variety and it's been lots of fun. It took more time than I realized. My house is dirty and only the basic things are getting done. While I'm not sick of making pie, I am glad for a break and need to focus on getting the house clean again. The spring weather is here (for now) and that will help with the cleaning.
This was not a very easy pie to make. Little things kept going wrong. I thought it would only take a bit of time to make so was squeezing it between Mom's in Touch in the morning, loads of laundry and another meeting in the afternoon. Big mistake. The pie still turned out ok but I was really rushed. Better to start this one first thing in the morning and relax in between. It set's fairly quickly, thankfully, so I was only a little late for my afternoon meeting. It's not fluffy but is really tasty with a smooth creamy texture. Since you can use any flavor of gelatin that you like, I used lemon and it was nice. Next time I'll try a different flavor and see how it turns out ... on a day when I have lots of time. Thankfully our last pie was a hit ... well, with most of us. Samuel only liked 6 of 31 pies and this wasn't on his list.
Once we finished I asked everyone what their favorite 2 pies were. Those will go into the repeatables cookbook. Many of them were the fridge and freezer pies. I was a bit surprised at what they chose.

    Allan 1. Peanut Butter Cup
    2.Coconut Cream
    Josiah 1. French Silk
    2. Grasshopper
    Hannah 1. Blackberry
    2. Dixie
    Samuel 1. Black Forest
    2. French Silk
    Me 1. White Chocolate Creamsicle
    2. Pecan

When Josiah guessed that the pies we chose would most likely be the ones we repeated, he urged everyone to not repeat anyone else's choices so we'd have more variety. Hard to put one by on him! Samuel still chose one that Josiah had already chosen. The favorites and a few others that weren't disliked by all will now be added to our family favorites recipe binder.
Thanks to Allan for agreeing to go on this unpredictable journey of pie. Hope everyone had fun. We may just have to try this with another type of food group.... after a short break. :) Any suggestions anyone?
