Day 29 - Carrot Ice Cream Pie



Carrot Ice Cream Pie – Taste of Home

1 1/3 c graham cracker crumbs
1/3 c packed brown sugar
1/3 c butter or margarine, melted
1/3 c lemonade concentrate
2 ¼ c chopped carrots
¼ c sugar

1 quart vanilla ice cream, softened
In a small bowl, combine cracker crumbs and brown sugar; stir in butter. Press onto the bottom and up the sides of an ungreased 9-in pie plate. Refrigerate for 30 minutes. Meanwhile, place lemonade concentrate, carrots and sugar in a food processor or blender; cover and process until carrots are finely chopped and mixture is blended. Transfer to a bowl; stir in ice cream until well blended. Pour into crust. Cover and freeze for 8 hours or overnight. Remove from freezer 15-20 minutes before serving.

Notes : Not at all what I expected...not sure what I expected, but none the less...another refreshing pie. Strange the carrot shavings in your mouth after the rest has melted, but if you don't mind the odd texture it's really good. Next time we may try pureed carrot to make the texture smoother.

We're down to the final days here at pie central. Two more to go, and it's all over. No real signs of extra weight gain or anyone sick of eating pie. What shall we do next???? mmm not sure if we will do a next....

  1. Do next??? WE??? I must admit that Allan helped out as much as he could. After a good threatening, the kids helped out when forced to. Still, I'm a bit sad to be leaving the pies behind. I didn't really have to come up with something for dessert because it was already decided ...pie.
    This is a pie everyone was dubious about having, except me. We really had no idea what it would taste like. There was a picture in my cookbook, but it didn't really help. The kids looked at the name, screwed up their noses and exclaimed "Carrots? Carrots in a PIE?"
    It was a nice surprise for those doubters. We have had some real wonkers in the pie department, but overall it's been a success. Why should they be surprised that this one tasted good? Like Allan said, next time (and there will be one!) I'll put the carrots in the food processer for a lot longer. I tried them first in the blender but there wasn't enough liquid for anything except the bottom to move so I transferred them to the food processer and had better success.
    I've noticed that many of these frozen pies have either lemon juice, lemonade or orange juice in them. It makes for a nice contrast with the sweet other ingredients and is a really nice background flavor in the pie. Not too hard to make.
